
Its officially spring time…. because the weather has been so beautiful that we’ve been able to grill. We’ve grilled three times this week already. I love this time of year. Its been months since we’ve grilled anything and it all tastes so delicious. This was a really easy meal – store bought jalapeno sausage + a few sliced vegetables thrown on the grill! Took less than 10 minutes to prep and didn’t require much in the way of monitoring! Perfect for a work night!

Grilled Sausage with Peppers & Onions
1 pound uncooked sausage links
1 large onion, peeled & cut into 3/4-inch pieces
1-2 large bell peppers, seeded and cut into 1-inch pieces*
Olive oil
salt & pepper
Preheat grill. Toss the onions & peppers with olive oil, then season with salt and pepper. Slide a skewer all the way through each onion slice. Repeat. Skewer all the peppers.
Grill the sausages, onions & peppers, covered, until well browned on all sides. Serve over rice.
