Sorry, I’ve gone MIA longer than I intended but work has been crazy. It was decided at the last minute a week ago that I needed to go overseas for work. I left three days and here I am back in Singapore again. I won’t be back home until the end of the month. I do have a couple posts saved up from some cooking I did right before leaving so I’ll bring you those til I get back home.
I figured it was about time I blogged about Vanilla Sugar! Its a fabulous staple to keep in your kitchen. It can be used as a substitute for regular granulated sugar in recipes… adding a bit of extra flavor. I particularly love it on on cinnamon toast!
The thing I love most about it is that its a great use for used vanilla beans. It always seemed like such a waste to scrape down the beans and then just toss them! This utilizes those scraped beans! You can make it with whole beans though if you’d like; the sugar will just have even more vanilla flavor.
If you don’t already keep vanilla sugar in your kitchen, start now!

Vanilla Sugar
- 1-2 vanilla beans, scraped or whole
- 2 c granulated sugar
Add sugar to airtight container. If vanilla bean is whole, slice bean in half lengthwise and scrape seeds into airtight container with the sugar. Bury beans in sugar and seal lid tightly. Allow sugar to sit 1-2 weeks to absorb vanilla flavors. Use as granulated sugar.

You just reminded me that I started some vanilla sugar a little while ago and the jar on a high shelf that was out of the way. Hah! I’ll have to go rescue it and see how it’s doing.

I keep an container of sugar that I throw my used vanilla pods into. Vanilla sugar is nice and fragrant!
I love this idea. My mama does this, I’ve seen it before, and dreamt of it often, yet I’ve never done it. So tomorrow I am off to the store, if only for vanilla beans. I will do this!
